Steamed Chicken Feet in Black Bean Sauce
? Eight chicken feet, cleaned and clipped
? 4 garlic cloves, minced
? 2 red chili peppers, sliced
? 2 tablespoon fermented black beans
? 1 tablespoon oyster sauce
? Black pepper, salt
Chop each chicken feet into two, right above the ankles. Pat dry.
Deep fry in hot oil till skin blisters. Drain, and rinse in cold water.
Lightly chop the black beans and mix with the oyster sauce, garlic and chili. Drain the chicken feet and dry off with paper towels.
Mix with the marinade and divide among four saucers. Season with a little salt and pepper.
Steam the saucers over high heat for 15-20 minutes. Serve hot.
